Spiralized Zucchini Lasagna
Ingredients:
- 1 tbsp oil
- 1 lb. ground turkey
- 1 tsp Italian seasoning
- ½ tsp salt
- ¼ tsp pepper
- 4 zucchini
- 24 oz jar marinara sauce
- 8 ounces mushrooms
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
Directions:
- Preheat oven to 350 degrees
- Heat oil in a large skillet over medium heat\
- Add turkey and seasonings and cook till browned
- Spiralized zucchini
- Cook zucchini in a large skillet until softened
- Transfer to plate with paper towels to absorb moisture
- Slice mushrooms
- Cook mushrooms in a large skillet
- Transfer to plate with paper towels to absorb moisture
- Spray large casserole dish
- Layer ingredients as follows
- ½ cup of marinara, portion of turkey and mushrooms, pile of zucchini noodles and ⅓ cup of ricotta
- Continuing layering two more times.
- Top with remaining mariana
- Bake in the oven for 20 minutes
- Remove from oven sprinkle remaining mozzarella cheese
- Bake for 5 minutes

No Chop Chili
Ingredients:
- 1 lb lean ground beef (or turkey)
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground cayenne (optional)
- 1/2 tsp garlic powder
- 1/2 cup prepared salsa
- salt and pepper to taste
Directions:
- Combine the ground beef and all of the spices in a medium saucepan
- Cook over medium heat for about 5 minutes
- When the meat is cooked through, add your salsa
- Simmer for 5 minutes
- Optional garnishes: red onion, cilantro, avocado, lime, cheese, sour cream, corn, peppers
