Italian Stuffed Peppers
Ingredients:
Peppers:
- 6 red bell peppers, tops cut off and seeds removed
- ½ cup dry quinoa
- 1 pound 90/10 ground beef
- 1 small yellow onion, diced
- 4 cloves garlic, minced
- 2 tsp Italian seasoning
- 1 tsp salt
- ½ tsp pepper
Sauce:
- 2 tsp Italian seasoning
- 1-15 oz can tomato sauce
Directions:
- In a large bowl, mix quinoa, beef, onion and seasonings.
- Spoon mixture into bell peppers (about 1 cup per pepper).
- In a small bowl, mix together seasoning and tomato sauce.
To cook in crockpot:
- Place trivet in Instant pot, then set stuffed peppers on trivet and cover with sauce.
- Close lid, seal valve. Cook on high pressure for 10 minutes, then quick release.
To cook in Instant pot:
- Place trivet in Instant pot, then set stuffed peppers on trivet and cover with sauce.
- Close lid, seal valve. Cook on high pressure for 10 minutes, then quick release.
Complete the meal by topping with Parmesan cheese and adding a salad.

Mini Spinach & Tomato Quiche
Ingredients:
- 3 Packets or 3 Scoops UNJURY® Unflavored
- 2 Cup Egg Whites
- 1 ½ Cups Spinach (gently torn apart)
- 1 ½ Cups Skim Milk
- 1 Cup Cherry Tomatoes (halved)
- ½ Cup Non-Fat Mozzarella Cheese
Directions:
- Preheat oven to 350º F
- Line 12 muffin tins with paper liners
- Measure 2 cups of egg whites into a large mixing bowl
- Measure 1 ½ cups of skim milk into a large measuring cup
- Add UNJURY to milk, 1 packet or scoop at a time, while continuously stirring
- Combine the UNJURY-and-milk mixture with the egg whites and whisk together for 5 minutes
- Add spinach, tomatoes, and cheese into mixture and whisk until well incorporated
- Using a ladle, fill each muffin tin ¾ of the way full
- Bake for 25 minutes
