The Registered Dieticians at Roller Weight Loss have come up with easy delicious recipes where vegetables are the star of the show.

Italian Stuffed Peppers

Ingredients:

Peppers:

  • 6 red bell peppers, tops cut off and seeds removed
  • ½ cup dry quinoa
  • 1 pound 90/10 ground beef
  • 1 small yellow onion, diced
  • 4 cloves garlic, minced
  • 2 tsp Italian seasoning
  • 1 tsp salt
  • ½ tsp pepper

Sauce:

  • 2 tsp Italian seasoning
  • 1-15 oz can tomato sauce

Directions:

  1. In a large bowl, mix quinoa, beef, onion and seasonings.
  2. Spoon mixture into bell peppers (about 1 cup per pepper).
  3. In a small bowl, mix together seasoning and tomato sauce.

To cook in crockpot:

  1. Place trivet in Instant pot, then set stuffed peppers on trivet and cover with sauce.
  2. Close lid, seal valve. Cook on high pressure for 10 minutes, then quick release.

To cook in Instant pot:

  1. Place trivet in Instant pot, then set stuffed peppers on trivet and cover with sauce.
  2. Close lid, seal valve. Cook on high pressure for 10 minutes, then quick release.

Complete the meal by topping with Parmesan cheese and adding a salad.

Mini Spinach & Tomato Quiche

Ingredients:

  • 3 Packets or 3 Scoops UNJURY® Unflavored
  • 2 Cup Egg Whites
  • 1 ½ Cups Spinach (gently torn apart)
  • 1 ½ Cups Skim Milk
  • 1 Cup Cherry Tomatoes (halved)
  • ½ Cup Non-Fat Mozzarella Cheese

Directions:

  1. Preheat oven to 350º F
  2. Line 12 muffin tins with paper liners
  3. Measure 2 cups of egg whites into a large mixing bowl
  4. Measure 1 ½ cups of skim milk into a large measuring cup
  5. Add UNJURY to milk, 1 packet or scoop at a time, while continuously stirring
  6. Combine the UNJURY-and-milk mixture with the egg whites and whisk together for 5 minutes
  7. Add spinach, tomatoes, and cheese into mixture and whisk until well incorporated
  8. Using a ladle, fill each muffin tin ¾ of the way full
  9. Bake for 25 minutes
